Shrove Tuesday - Niall & his team would like to share his recipe for our Famous Carrygerry Pancakes

Pancakes were a traditional way of Shrove Tuesday or Mairt na hInide to use up surplus egg, butter & Milk.
Irish Tradition had it that successful Pancake tossing was a sign of success in finding a Marriage Partner.
Niall & hs team would like to shart with you their Traditional Pancake recipe which is available on our Breakfast Menu accompanied by Stewed Apples from the Carrygerry Orchard.
 
Ingredients :
4oz white flour
pinch of salt
1 egg
half pint milk
half oz. melted butter
1oz sugar
1 lemon
Method :
1. Sieve flour & salt into a bowl, make a well in the centre
2. Add egg & gradually add milk, whisk to a smooth batter
3. Mix in melted butter
4. Heat the pancake pan, add a little oil, heat until hot.
5. Add enough mixture to cover the bottom of pan thinly and cook for a few seconds until brown, turn & cook on the other side.
6. Turn onto a plate & sprinkle with Lemon & Sugar.  Fold in half & then half again.
